Grown by Javier Rubio at Finca El Libano. This coffee was carefully hand-picked to use only the ripest cherries. The cherries are then fermented for 14 hours under water (anaerobic). After this initial anaerobic fermentation, the cherries are then laid out to dry on raised beds for 25 days until the ideal moisture content is achieved. This one is sure to impress the wild coffee connoisseur.

San Bernardo is a natural dwarf mutation of Typica origination in Guatemala and sometimes known as Pache. It is a very rare variety to come across within Colombia. The these are even smaller than Caturra or Castillo and are highly susceptible to leaf rust. The yield is relatively low however the cup quality is exceptional with complex floral and spice notes.
